Here's how we do it the healthy way:
1. Start With Real Natural Cacao
We grow our cacao on our chemical free farm with care. No synthetic fertilizers, no sprays. Just good soil, sun, and time. Healthy beans make healthy chocolate.
2. Purposeful Fermentation and Roasting
Beans are fermented and sun dried after harvest to develop flavor and nutrients. Then we carefully roast to enhance flavor while maintaining antioxidant levels and the deep cocoa aroma.
3. No Refined Sugar - Honest Sweetener
We choose jaggery, a unprocessed, mineral-rich sweetener that creates a cordial appeal and richer taste than whitened sugar, which is more easily digested. Our bars will be naturally sweet, not exceedingly sugary.
4. No Heavy Cream or Condensed Milk
We skip the heavy cream and sweetened condensed milk. For our chocolate we use coconut milk, which allows it's creaminess, while being vegan and easily digestible.
5. Flavor With Purpose
We use flavors we know: a pinch of salt, a hint of chili, a splat of guava — bold, natural, never never artificially. Each flavour has Indian roots and is meant to awaken your senses.
6. Hand-Made With Heart
No mass production. No shortcuts. Each Kaabaay bar is made by hand in small batches, with attention, care, and intention at every level. Healthy is not bland. Healthy is honest, intentional, and rooted in values.
